Egg pasteurization is done by various processes, namely, heat without chemicals, heat plus hydrogen peroxide, hot room treatment of dried egg white, heat plus vacuum. The pasteurized egg is used in the food and beverage industry for manufacturing dietary food supplements, mayonnaise and dressing, noodles and pasta, dairy products, desserts, meat and fish, pet food, and others.
